A plot divided into 5 blocks
Domaine de la Cendrine's plot of just 1.3 ha overlooks Charrey/Seine. At altitude, 5 blocks make up this garden of vines, the result of different years of planting, from 1990 to 2014. Only Chardonnay (30%) and Pinot Noir (70%) have been chosen to create highly expressive wines, on a clay-limestone soil facing east.
Common sense viticulture, respectful of the environment
Raphaël Bellotto works with great precision, which is made possible by the size of the plot: act at the right moment, prune neither too early nor too late, plough and work the soil, harvest at the right maturity.
In the cellar, patience is everything
As with the vines, the Domaine's small size means that we can work with great precision and take our time. Harvesting is done by hand, in a family spirit, when the grapes are simply ready. This is followed by gentle pressing and a 10-hour settling period.
The juice is then transferred to stainless steel tanks for alcoholic fermentation. They are then aged for several months (without malolactic fermentation) to give them extra elegance and time to fully express themselves, before tirage (bottling) in July or August, depending on the vintage.
Confidential cuvées that express the winemaker's personality as well as their terroir
Domaine de la Cendrine produces 3 cuvées: Parcelle, L'Originelle and Confidentielle. Each expresses a facet of the locality:
Parcelle is representative of the (micro) domaine, blending Pinot and Chardonnay from the 5 blocks and therefore the different planting years (between 1990 and 2014). Tasty.
L'Originelle is a Blanc de Noirs made from the oldest vines, those of the first plot of Pinot Noir planted in 1990. Intense.
Confidentielle is a Blanc de Blancs, half from the Domaine's oldest Chardonnays (planted in 1999) and half from Chardonnays planted a few years later. Delicate.
